GALLETAS DE ESPECIAS {CHRISTMAS BITES FULL OF SPICES}


De nuevo, estoy participando en el reto del blog FILM & FOOD para los meses de Noviembre y Diciembre. Esta vez se trata de un intercambio de galletas, entre blogueras, jugando todas al "amigo invisible".

Again, I find myself taking part in a new challenge from the blog FILM & FOOD for Nov and Dec. Oh this time it´s fun. We had to send cookies to a blogger, assigned by them. All of us playing Secret Santa!.


¡Me puse tan contenta cuando recibí su paquete!.

I was thrilled when the postman brought me the parcel



Lo quería abrir rápidamente (que horror), tenía que esperar a hacer el paso a paso de las fotos. No veo el momento de ver el contenido del paquete.

I simply wanted to tear it open (what a pain), I had to open it slowly to make the step by step pictures for the post. I almost forgot it!!!. I couldn´t wait to see what it was inside and who was the sender.


Sigo sin ver nada, madre mía pues si que lo ha envuelto bien.

Oh God!, I can´t see anything yet. I must say this blogger really wrapped it well.




¡Por fín!. Unas letras.

Finally I get to see her crystal pot!. What a beautiful way to send me her cookies!. Absolutely Christmassy!.




La verdad es que esta no iba a ser mi forma de presentar sus galletas en el post. Pero "fisgando" su blog el otro día, me encontré que ella tiene una taza a juego de esta base para cortar, y me hizo tanta gracia que la tenía que incluir aquí. ¡Silvia tenemos una cosa igual en nuestras casas!.


Okay, I was never going to set the cookies in a background like this, but the other day as I was browsing through her blog, I found out she has a mug with the same girl on a swing, like the one I´m showing you below. I had to take a picture of it and post it in here to tell her that we have something in common in our kitchens!!!.



Ahora si que va la decoración definitiva. Pero tengo que confesar algo. Para cuando empecé a hacer este decorado, ya no había las 12 galletas reglamentarias sino que todas las fotos se han hecho con 10 galletas y no os penséis que ha sido porque a Silvia se le olvidaron 2, ¡no no!, sino porque nos las comimos según recogíamos las cosas.

There you go now with the finished touch!. I have to tell you something though. When I started to think about what i was going to include in this picture, there weren´t 12 cookies anymore. All the pictures were taken with just 10 cookies. Okay, don´t blame Silvia, she didn´t forget to put all the biscuits, the thing is that we ate two before even thinking about the post!!!.



Las galletas deliciosas. Llenas de especias, nuez moscada, cilantro, canela, cardamomo.

The cookies were delicious. Full of spices like nutmeg, coriander, cardamom,
cinnamon.




En las fotos parecen unas galletas secas, pero os juro que eran como bizcochitos.

In the pictures they look as if they were some dried cookies, but believe me, I swear they were like small cakes, soft and tender.



Quería hacer un post digno para mi amiga invisible galletera.

I wanted to make a beautiful post for whoever was sending me the cookies.



LA RECETA - THE RECIPE

BOCADITOS NAVIDEÑOS DE ESPECIAS - CHRISTMAS´BITES FULL OF SPICES

INGREDIENTES PARA 120 GALLETAS
200 gramos de mantequilla sin sal
550 gramos de miel
200 gramos de azúcar
10 gramos de jengibre en polvo
10 gramos de anís en grano
5 gramos de nuez moscada en polvo
10 gramos de cilantro en grano
10 gramos de canela molida
4 semillas de cardamomo
30 gramos de cacao puro en polvo
1200 gramos de harina
1 sobre de levadura en polvo (16 gramos)
2 huevos
Una pizca de sal

INGREDIENTS - IT MAKES ABOUT 120 COOKIES
200g unsalted butter
550g honey
200g sugar
10g ginger powder
10g anise in grain
5g grated nutmeg
10g coriander, in grain
10g cinnamon powder
4 cardamom seeds
30g very good and pure cocoa powder
1200g all purpose flour
16g baking powder
2 whole eggs
A pinch of salt



PROCEDIMIENTO - METHOD

En un mortero, machacaremos bien las semillas de anís y las de cilantro, las tamizamos y las ponemos en un cuenco junto con la mantequilla, el cacao, la miel, el azúcar y las especias. Lo ponemos a fuego lento hasta formar una pasta. Lo dejaremos enfríar un poco.
En otro cuenco, echaremos la harina tamizada con la levadura, la sal y los huevos. Mezclaremos todo muy bien. Ir añadiendo poco a poco la pasta anteriormente preparada y se baten todos los ingredientes hasta que estén bien integrados. Se tapa y se deja reposar 24 horas en la nevera. Precalentamos el horno a 200ºC, con calor arriba y abajo. Cubriremos la bandeja del horno con papel sulfurizado o un silpat. Iremos cogiendo un poquito de masa, aproximadamente del tamaño de una nuez, formaremos una bolita y aplanaremos. Las iremos colocando en la bandeja del horno. Hornearemos unos 12 minutos. Dejaremos que enfríen por completo sobre una rejilla. las podemos servir pintadas con glasa o espolvoreadas con azúcar glas.



We have to grind the coriander seeds and the anise grains, use a spice grinder or a mortar and pestle. Seize them and transfer to a bowl together with the butter (room temperature), the cocoa, the honey, the sugar and the rest of the spices. Put them over a low heat until ot forms a dough. Let it cool for a while.
In another bowl, put the flour with the baking powder, the salt and the eggs. Combine everything well. Little by little, add the dough we previously formed and beat all the ingredients until well mixed. Cover them and leave them resting for 24 hours inside the fridge.
Preheat the oven to 200ºC. Then use your hands to bring it all together to form a dough. Take small portions and roll them into rounds. Place them on a large baking tray lining the base with baking parchment and press down gently to flatten them.
Bake them for 12 minutes. Leave them to cool completely over a wire rack. We can brush them with the some glacé or simply sprinkled with icing sugar.
